The state drink and expertise of Oaxaqueños is the alcoholic beverage of Mezcal. Mezcal has always been made of the Agave plant. Each plant lasts about 7 years to mature. The next process is to cut the top part of the agave plant and leaving what they call la piña (the pineapple) which is in picture one.
